About the Project
SafeBite is an innovative food freshness indicator sticker developed using red hibiscus extract as a source of anthocyanins. This study focuses on chicken meat as the main sample and aims to produce an indicator film that can show colour changes when changes occur in the sample environment. The SafeBite film is formulated using red hibiscus extract, CMC, glycerol, citric acid and distilled water, with sticker paper used as the support layer. The study involves selecting a film formulation based on leakage, colour stability and behaviour under humidity, followed by testing chicken meat for five days under variations in temperature, humidity and light. The recorded parameters include pH, SafeBite colour changes, meat colour and condition, odour, texture, and humidity or liquid on the sample. Actual experimental data will be used to determine the relationship between SafeBite responses and changes in sample condition. Pineapple and watermelon are proposed as future optimization samples because their matrices, water content and chemical characteristics differ from chicken meat. SafeBite has the potential to serve as the basis for an easy-to-observe freshness indicator system, but further studies are required to calibrate the colour scale and formulation according to food type.
